Grilled cheese #3

I did mention I like cheese before, right? Tonights easy dinner was another grilled cheese. When I asked my better half if he wanted one,.he made some comment about not "needing all that cheese and butter".

What? What is he insinuating exactly? That a grilled cheese is nothing but fattening stuff layered in between fat smeared white stuff?? Hmm, let me ponder that a while.

Ok, perhaps he is right, but you know what?, I eat pretty darn healthy all the other time so.....

So, my grilled cheese tonight featured Cooper sharp cheese, basil pesto, a couple of slices of an Ugly tomato (my fave) and spinach. See, plenty of veggies! It was practically a salad between that bread! :)

Productive day in the kitchen!

Our dogs get us up pretty early on most weekends; usually between 6 & 7 AM, which is fine with me. It's still later than we get up during the week for work and it gives me plenty of time to do things around the house and still get out early to run errands.

This morning by 7:30 I had turkey meatballs in the oven baking, tomato sauce on the stove simmering and a dozen eggs in a hot tub hard boiling!

By 8 AM I had made a quick gucamole and maybe had it for breakfast. ;) 8:30 produced a beautiful egg salad for lunches for the week, using the best, freshest eggs I am very fortunate to get from

The base for my tomato sauce also came from them today! Thanks HCH!

Dinner was a basic favorite, spaghetti with meatballs. Simplicity at it's best right? :)

It was also a beautiful day here in Pennsylvania, the dogs enjoyed soaking in some Vitamin D, as did I.

2012 garden

Planted my garden for the year, all 6 plants of it!  Hopefully, I'll get some sort of bounty from it. I have some issues with sun. That comes in the form of this horrid huge tree behind our house. I hate this tree but it doesn't belong to us so I just hadn't to deal with it.
I planted 3 heirloom tomatoes: black krim, cherokee purple and mortgage lifter. Yea, I never heard of them either. And 3 pepper plants;2 cubanelles and 1 red bell.
If I get 1 veggie each from each plant, I'll be happy! :)

My grilled cheese was so good last, I decided to have one for breakfast! and with avocado!!

Manchego was the solo choice cheese this morning.  Can you say"delicious"?!

Grilled cheese

I love cheese. Some people love chocolate. I could care less about chocolate. But cheese, I love cheese and lately I've been craving a grilled cheese.

I was going to use white american cheese but it seemed the easy way out. I felt compelled to use a more "gourmet" cheese. I chose machego. Oh, I love machego. When came time to assemble the sandwich, I remembered I also had some really good feta. And then I thought "are there rules?!"....does machego and feta go together in a grilled cheese?! ...are there rules?! 

If there are, I broke them.
I made my machego and feta grilled cheese and it was delicious. Isn't that all that matters?!

Yum.
Oh and yes, I started eating it before I took the picture, I just couldn't wait.


Quick sewing

This morning, I did some quick sewing, making a dog bed for a friend. With the leftover fleece, I made a couple tug toys.

The bed has the Martini stamp of approval; she tests all beds before they go out! ;)

Martini, the new girl in town

Here's a quick update on the new girl....Martini. She came into our lives in December 2011 in the form of an unexpected birthday present. She is my sweet little baby girl. We all love her.
